A Highland Fling for the National Trust for Scotland

How Richmond met the brief:
Richmond were delighted to be asked to cater for the annual National Trust for Scotland dinner dance for the fourth year running.
As our client wanted the main emphasis of the evening to be on the music and dancing, we were asked to set the tables closely together to allow plenty of space for the dance floor. We also created a time efficient menu to enable our hosts and hostesses to serve and clear quickly.
Porchester Hall is a striking venue built in the 1920s with an elegant Victorian style. Its historic oak and walnut panelling and luxurious rich crimson velvet drapes created an elegant setting for the evening. The venue easily accommodates 300 for dinner and boasts a large dance floor perfect for the traditional Scottish reels dancing!
On arrival guests were served with sparkling wine and offered a selection of canapés which included Scottish salmon and Haggis. To add a twist to the evening the smoked salmon, cream cheese and chive roulade pancakes were placed on a skewer and mounted vertically from a canapé tray with a grass effect so they looked like lollipops.
As they were called for dinner, a piper led the guests to their seats. With the need to serve quickly in mind, the Richmond team set to work making their way round the 300 guests with the main course served in just 15 minutes. The kitchen staff worked equally as hard to ensure each guest received beautifully pink lamb. The dessert introduced a range of delicate flavours – creamy pannacotta, smooth chocolate and a puree of spiced apple. The meal was paired with wines provided by the client and rounded off with a tot of Scottish Whiskey alongside coffee and shortbreads.
The table centres included church style candles placed in bread baskets with satsumas and chocolates, creating a beautiful citrus aroma as well as a much needed energy boost for the dancing ahead!

“I wanted to thank the team so much for all your hard work and effort with our dance last night. It was a great success – the best ever I am told this morning. The timing for the whole evening went perfectly. The dinner delicious and the dessert was a triumph – compliments to the chef. Please also thank all your friendly and efficient staff. They coped magnificently with the cramped space to serve and clear. However to my eye it all worked and there was enough room to dance without compromising the tables. Look out for another 300 next year!”
